recognize Perlman to be a classical violinist.
So, by his very appearance on this album, did it then render it to be
classical music or did it remain to be jazz?

Similar question applies to the Grappelli/Menuhin sides.

No question about Grappelli but Menuhin not only had to get Grappelli to 
write the notes out for him but when he plays it doesn`t even swing.. So by 
most accounting that is two major reasons that it is not jazz. Doesn`t 
swing, not improvisation ( Or `improv` which you have to say to be cool 
these days).
Does that mean that a record with Grappelli playing is not jazz. Perish the 
thought.

Does it matter?
