I have more than a few stories. Let start with the best.
Working at the Starlight Room of the Waldorf in New York.
The year(s) sometime between 1950 and 1970.

The room served "French" service. Waiters came to the table
wearing white glove, with platters. (prime ribs on a platter,
roast beef on another, various veggies on a platter, etc. )
The diners chose whatever they wanted, any or all.
The food went back to the kitchen, never to return.

Each item was placed into a hot tray on a steam table, similar
to some cafeterias.

The help, band included, was charged twenty five cents per person
to help themselves to whatever they wanted. Think lobster, roast duck
cherries jubilee, or whatever you like best.
Yummy.
P.S. I did not take a sandwich when I got home.
