Indeed, Gilroy is the self-proclaimed "Garlic Capital of the World." (After
all, my email address is "@garlic.com"...) 90% of the garlic processed in
the world is processed here, But you don't stomp garlic. You press it. 

Gilroy is in the heart of the Santa Clara Valley, which is the oldest
continuously producing wine region in the USA. Zinfandel is one of the
leading varieties here. And (at least in folklore), you do stomp grapes.
