Hill and dale means the groove is modulated vertically, or up and down  
instead of from side to side. Now here's a thing: at one time disc recordings of  
long performances were cut from the outside edge to the centre alternating  
with ones cut from the centre to the outside. As the speed of rotation of the  
disc relative to the cutting head decreases gradually from outside to  centre 
there is a consequent loss of upper frequency response which makes the  
changeover to the next disc most apparent. Cutting from centre to edge minimises  the 
effect on the listener. PS Don't get me going on swarf removal!
