In addition to your list of Milt Gabler, Art Hodes, Artie Shaw, the
Gershwins, Milton Mezzrow and Benny Goodman and those added by Don Ingle
Harry  Goldie and son Don Goldie, Manny Klein, Jack Lesberg, Irving 'Itzy'
Riskin, Ziggy Elman and Buddy Rich a quick Google search also turned up
Johnny Mince (Muenzenberger), Al Cohn, Stan Getz, Paul Desmond, Red Rodney,
Shorty Rogers, Ruby Braff, Terry Gibbs, Morey Samuel and Moe Zudecoff (Buddy
Murrow).
To which can be added Harry Goodman, John Birks 'Dizzy' Gillespie and Woody
Allen.
There is also a long line of pre-war British Jewish jazz musicians.
Plus jazz writers Leonard Feather and Nat Hentoff, and record producers
(Blue Note) Alfred Lion and Frank Wolff.
There has to be more.
