I had the privilege of hearing Joe Darensbourg sing this song several times
a day when I worked at the French Market at Disneyland in the late 60's and
he was in charge of the daytime band. Other than rhythmic necessity, I
never understood the difference between the spelling and the pronunciation.
I can still imitate his physical style and sound in singing the song.
(Finger snapping and one foot tapping, looking around at the crowd, but no
other body movement whatsoever...)
I still see and hear it in my mind - those were the days!!! Because of that
song, I had to find a good red beans and rice recipe to find out why they
were "so nice!" (I still use the same recipe to make them...)
