Dear Charlie,
The oft quoted Eric Townley in 'Tell Your Story' says that a big butter and egg
man was "a nickname for wealthy farmers from the Midwestern states who came to
Chicago and other large cities to spend lavishly in bars, clubs, etc., on girls,
liquor, food and entertainment." 
"I want a 'wealthy farmer who spends lavishly' a way out in the west
.............".
This makes sense to me here downunder. 
Have a re-listen to the Louis Armstrong Hot Five 23 June 1926 version of "Big
Butter And Egg Man From The West" (correct title, composed by Percy Venable).
The Lil and Louis vocal says it all.
Still a magnificent version!!!
