I've been using Sound Studio on my Mac.  It transforms the sound from any
source (LP, tape, record) into .aif files which I believe is a MAC sound
format.  It will record continuously and when you finish you can see the
wave forms  showing you where the breaks between songs are.  You then add a
marker which splits it into tracks.  I've had very good luck with this, but
I haven't tried any EQ adjustments, de-popping / crackeling, etc.
Once that's done, it's saved to the HD and you burn CD's from that.
